Banana "Supreme" Toast

Quick enough for delicious nourishment on a busy day, and delightful enough to share at a brunch with family or friends, Banana ”Supreme” toast, as we fondly call it in my household, is a flavourful and easy breakfast solution to add to your morning rotation. Taking just a few minutes and using ingredients you may already have most of on hand, this quick and easy toast feels that little bit extra special, works equally well as an anytime snack, and delivers enough enjoyable satisfaction to get you through to the next meal.

I am too often the mum in that meme that creates the most nutritious well rounded breakfast for her child, only to leave herself eating some sad, unsatisfying granola bar as she runs out the door. I find breakfast the hardest meal of the day to accomplish (for myself that is); I am not usually hungry until brunch time, and most foods don’t feel especially enticing to me in the early hours. I am often on the lookout for quick and nourishing breakfast ideas that I might actually eat, and I find this loaded toast appetizing and easy to eat when I know I should. Plus, my little sidekick loves it, so it's a win-win situation all around!

Ingredients for Banana "Supreme" Toast

All you need for Banana "Supreme" Toast is:

  • Your favourite whole grain bread
  • Coconut butter
  • Almond butter
  • Ground Cinnamon
  • Bananas
  • Honey
  • Hemp seeds

Banana "Supreme" Toast is quick as a snap!

Making a slice of Banana “Supreme” Toast is a snap. A toasted slice of your favourite whole grain loaf is topped with slathers of coconut butter and almond butter, sprinkled with cinnamon, topped with sliced bananas, drizzled with honey, and sprinkled with hemp seeds and any other optional toppings that tickle your fancy. That’s it!

Optional toppings

If you really want to go to town, you can continue to load up your toast with other optional toppings that juzz things up even further, such as toasted shredded coconut, a sprinkle of bee pollen or sesame seeds, mini chocolate chips, or even some crushed granola.

Coconut butter: worth adding to your pantry

If you don’t have coconut butter on hand, consider adding it to your kitchen; it is such a flavoursome and useful Food Find to any plant-based pantry, easily found at health food stores, or quickly and economically made at home. Coconut butter is simply unsweetened shredded coconut, blended for about 10 minutes until it turns into a liquid puree, which is syrupy when warm and solid at room temperature. Ingredients

  • 1 piece whole grain bread
  • coconut butter to taste
  • almond Butter to taste
  • ground cinnamon to taste
  • ½ banana sliced
  • honey to taste
  • hemp seeds to taste
  • optional toppings: toasted shredded coconut, bee pollen, sesame seeds, mini chocolate chips, or crushed granola.

Instructions

  • Toast your bread, then spread coconut butter, then almond butter, sprinkle with cinnamon. Layer on the sliced banana, drizzle with honey, and sprinkle on the hemp seeds and other optional toppings. Serve, and enjoy!
